The 8th annual Kohler Festival of Beer is April 29-May 1 – a celebration bringing together brewmasters from across the country at Destination Kohler. The weekend is crafted for the beer enthusiast with brew-themed happenings. Guests can enjoy flavorful food pairing experiences, tasting soirees, educational seminars, culinary demonstrations, lively music, and a 5K Beer Run/Walk. This year the line-up of new events includes an interactive grilling experience, sessions on homebrewing, beer-infused cooking, craft beer trends and more. Satiate and Educate
Educational opportunities are plentiful for craft beer fans of all levels and interests. Brewmasters, cicerones, chefs and chocolatiers host inspiring educational sessions throughout the weekend:

  • Beer Infused Foods ($35), Friday at 5pm – Discover how to incorporate and infuse beer into favorite foods and recipes at this cooking demonstration with food and beer samples.
  • Art of Homebrewing ($40), Saturday at 10am – Learn the techniques, tips and secrets to create beer at home.
  • Beer 101 ($30), Saturday at 2pm – Gain insight into the basics and nuances of beer and brewing at this session focusing on history, proper pouring techniques and glassware.
  • Craft Beer Trends, ($30) Saturday at 4pm – Get a taste of the latest trends in the craft beer industry from a certified cicerone.
  • Those seeking a hands-on experience will enjoy The Art of Grilling ($120) on Saturday at 5pm featuring a 1.5 hour session on grilling basics, tips and tricks hosted by resort chefs. Twenty culinarians will line the grilling stations at this interactive session as they prepare and enjoy dinner.

A new event this year affords a sole brewery the opportunity to showcase its portfolio of craft beer to festgoers.

Tasting events with ample samples

Kohler Festival of Beer signature events celebrate the discovery of beers from more than 30 breweries. The events include both abundant beer tastings and food pairings. Performances by regional bands include Copperbox, Marc Croft Band, DJ Sye Young and Sammy Llanas, the former lead singer of the BoDeans.

  • Hops the Shops ($40) taps the weekend with a pairing event at The Shops at Woodlake on Friday from 8-11pm.
  • Regional chefs collaborate with brewers to share fantastic grilled fair with beer pairings at Shorts and Chefs ($40) on Saturday from 11am-1pm.
  • A day choc-full of beer-themed events culminates at Cheers to Beers ($90) tasting gala on Saturday from 6-9pm featuring high-end and hard-to-find beers at the inspiring Kohler Design Center, a showroom of Kohler Co. products and services.

Visitors to Destination Kohler can enjoy beer-themed menu additions at its restaurants, an al fresco beer garden and special offers at Woodlake Market. Resort restaurants get in the spirit offering unique food and beverage specials at various locales including the resort’s historic taproom Horse & Plow Restaurant & PubCraverie Chocolatier Café will pinpoint select beers that pair perfectly with Kohler Original Recipe Chocolates. Cucina will host lively music and small bites at the Goose Island Beer Gardenlocated in the breezeway at The Shops at Woodlake on Friday from Noon-6pm and Saturday from 10am-6pm. The Wisconsin Room will host a Friday evening Sierra Nevada Lobster & Seafood Buffett and the Beer Lovers Brunch ($40) on Sunday morning. Woodlake Market will showcase featured festival beers making it easy to take home new favorites.

My Favorite New Kale Slaw Recipe

I made this Kale Slaw last week, and my husband and kids loved it! Then I had to take a side dish to some friends house to go with dinner on Saturday night so I made it again (they loved it!). All you need is fresh kale, shredded cabbage, lemons, sesame seeds and walnuts, and most of the other ingredients you already have on hand. It’s so easy and fresh! Just one thing: It’s addictive so you may want to double the recipe. It will keep up to 2 days so enjoy!

Ice Cream Travel Guide

Black Forest Ice Cream

It’s the heat of July, and that means one thing – ice cream! Check out my ice cream travel guide with these ice cream recipes from 4 renowned hotel chefs that are far from being just vanilla. Black Forest Ice Cream (above) is courtesy of Pastry Chef Brittani Szczecina, Palm Beach Marriott Singer Island Beach Resort & Spa. Enjoy this recipe and the other three selections.

1. Peanut Butter & Beach Plum Jelly Ice Cream from Executive Chef Daniel Kenney, Sea Crest Beach Hotel – Cape Cod, Mass.

Yield: 1 quart of ice cream

½ cup organic sugar

3 organic eggs

1 cup organic whole milk

¾ cup organic peanut butter

¾ cup Cape Cod beach plum jelly

¾ cup condensed milk

½ cup organic heavy cream

2 teaspoons vanilla beans, fresh from pod

Directions:

1.  In a medium bowl, beat the sugar and eggs with an electric mixer until thick, about 3 minutes. Set aside.

2. Pour milk into a small saucepan, and bring to a simmer over low heat. Gradually drizzle the hot milk into the eggs while whisking vigorously. Then pour the whole mixture into the saucepan.

3. Cook over low heat, stirring constantly, until thick enough to coat the back of a metal spoon. Do not boil.

4. Remove from heat, and whisk in peanut butter. Allow to cool slightly, then whisk in the sweetened condensed milk, heavy cream and vanilla beans.. Cover and refrigerate until chilled.

5. Pour the mixture into an ice cream maker, and freeze according to the manufacturer’s instructions. Fold in beach plum jelly when mixture is still soft, then transfer to a container, and freeze until solid.

 

2. Banana Split from Executive Chef Caleb Lara, Harbor View Hotel – Martha’s Vineyard, Mass.

Yield: Makes 1 dessert

1 scoop vanilla bean ice cream

1 scoop chocolate ice cream

1 scoop strawberry gelato

1 banana, sliced lengthwise

Dark Rum Pineapple Sauce (recipe below)

2 tablespoons Italian cherries in liqueur

Freshly whipped cream

1 waffle cone, broken into pieces

Dark Rum Pineapple Sauce

1 cup finely chopped fresh pineapple

½ cup granulated sugar

¼ cup dark rum

Directions:

1. Make the pineapple sauce by simmering all the ingredients together until a glaze forms

and the alcohol cooks off.  Let cool before serving.

2. Arrange the ice cream ingredients in a platter (ice cream, banana, Italian cherries) and

 drizzle with pineapple rum sauce. Top with freshly whipped cream and waffle cone pieces; serve immediately.

 

3. Rhubarb-Mint Ice Cream from Executive Chef David Haick, Whiteface Lodge – Lake Placid, New York

Yield: 1 QT

2 cups rhubarb puree

1 liter heavy cream

14 each fresh egg yolk

2 cups sugar

½ cup fresh mint

Directions:

1. Heat heavy cream until 180 degrees. Add mint and steep 10 minutes. Strain through chinois.

2. Combine yolks and sugar and mix until ribbon stage. Add warm cream. Bring to a thick consistency or until 185 degrees.

3.  Add rhubarb puree, and combine well. Use a Paco Jet machine to continue the process. Serve with fresh fruit.
