Caprese Grilled Cheese

When I was asked to come up with a unique grilled cheese recipe for theĀ Wisconsin Milk and Marketing Board and their “Grilled Cheese Academy“, I thought, why not take my spring favorite salad and make it a grilled cheese. Caprese Grilled Cheese is the simple combination of tomatoes, mozzarella, basil, balsamic vinegar and olive oil. I added avocado to mine. Feel free to use your favorite bread and any other ingredients you like.

Light, Delicious Breakfast Idea: Blueberry-Orange Muffins

It’s hard to believe that my three kids rarely ever eat cold cereal for breakfast. Maybe, it’s because I spoil them (most likely my fault). I love new breakfast ideas that are great for breakfast on the go (our mornings are pretty hectic). These Blueberry-Orange Muffins are ideal because they are easy to make, so healthy and yummy, and they even make a great afternoon snack. Feel free to use cranberries instead of blueberries and all-purpose or whole wheat flour.

Healthy and Light Salmon in Under 30 Minutes: Salmon with Orange Salsa

I’m always looking for new recipes and ideas on how to prepare salmon since we eat it so often. I have been beyond incredibly busy lately with work, kids and more work. I love this recipe because it’s so easy and fresh and can be prepared in under 30 minutes. Plus, it’s really light and healthy. I made this recipe for NBC 13 “Daytime Alabama” that will air this month, and it is one of I Can’t Believe It’s Not Butter’s wonderful recipes that I tweaked (just slightly) for TV.

Spring Little Cakes: Easter Petis Fours

My daughter’s Leigh’s favorite dessert is Petit Fours, and these remind me just like her: sweet, pretty and incredible! I thought for Easter and spring, I would offer this recipe from Land O Lakes butterĀ that I use when I’m short on time. It uses a cake mix which really cuts down on the work. These are light and taste as good as they look.
