20 Minutes, Simple and Light: Lightened-Up Veal Piccata

I love Veal Piccata and realized that it can be lightened up tremendously, and it is oh so easy -only 20 minutes to prepare. This recipe also works great with chicken cutlets and sliced pork loin, both easily found in the grocery store. Both of these options come thinly sliced which eliminates having to pound the meat. I used egg whites for the liquid and a simple whole wheat flour mixture for the breading. Then, I lightly fried in olive oil. Serve these with a salad and a vegetable, and dinner is on the table in less than 30 minutes.

Spring Salads: Curry Chicken Salad

I love Curry Chicken Salad, and this is one of my favorites. It’s really quick and easy because I like to use rotisserie chicken to simplify things. The combination of chutney, white wine, curry, cranberries and nuts flavor it to perfection. Kentucky Derby Favorite: Cheese Straw Buttons

When I think of Kentucky Derby, my mind goes straight to Cheese Straws. I love this recipe for Cheese Straw Buttons that is a classic from Southern Living. I prepare mine a little differently by not using a cookie press and using Wisconsin Cheddar cheese. These are really easy and feed a crowd so they’re the perfect snack and appetizer for a party anytime of the year.

Easy and Healthy Side Dish: Grilled Zucchini with Rosemary and Feta

I get a lot of requests for easy and healthy side dish recipes, and this is one I absolutely love. Grilled Zucchini with Rosemary and Feta is incredibly flavorful and so versatile. It can be paired with any main-dish: chicken, shrimp, steak, burgers, fish, pork, etc. If you don’t have time to preheat your grill, you can certainly use a grill pan indoors over the stove. Feel free to substitute goat cheese for the feta, and my favorite by far is Belle Chevre.

Caprese Grilled Cheese

When I was asked to come up with a unique grilled cheese recipe for theĀ Wisconsin Milk and Marketing Board and their “Grilled Cheese Academy“, I thought, why not take my spring favorite salad and make it a grilled cheese. Caprese Grilled Cheese is the simple combination of tomatoes, mozzarella, basil, balsamic vinegar and olive oil. I added avocado to mine. Feel free to use your favorite bread and any other ingredients you like.
