Summer Easy Dinner: Glazed Pork with Peach Salsa

Try Pork with Peach Salsa for a quick summer weeknight meal. This recipe is so easy using peach preserves and honey as a glaze over the pork. I use boneless pork loin chops because they cook so quickly, perfect for busy people. Feel free to grill the pork outdoors, inside in a grill pan or even nonstick skillet. This Peach Salsa is wonderful and filled with fresh peaches, cilantro, purple onion and lime juice. If you don’t eat pork, feel free to subsitute boneless chicken breasts, or I prefer chicken cutlets because they are thinner and cook even quicker.

Weeknight Favorite Main-Dish: Lemon Chicken over Pasta

I made this Lemon Chicken over Pasta for a healthy project I’ve been working on. My assistant, Alatia, loved it. She said the most difficult part of this simple recipe was squeezing the lemons. I love to use chicken cutlets, which are thinner than boneless chicken breasts, because they take less time to cook (which is great for anyone with limited time). The chicken turns out so flavorful. Be sure to use the extra marinade to pour over the noodles. This is a great weeknight recipe idea that even younger kids will love.

Easy, Healthy Summery Recipe: Shrimp Caesar Skewers

The two food items that all of my three kids love, is shrimp and Caesar Salad. So I knew that when I came up with the recipe for Caesar Skewers for Kraft, I better make plenty for everyone. This recipe is too easy for words, only 15 minutes of prep time. Feel free to purchase already-cooked, frozen shrimp if you find that it’s cheaper. I have been buying it a lot lately, and the quality is great. Enjoy this as summer nears for a light one-dish meal.

Easiest Healthy Tuna Ever: Fresh Basil-Red Pepper Tuna

We have tuna salad just about every weekend at my house. I’m fortunate because my kids love it. I’m always trying to come up with new ways to give it a twist. I had some leftover fresh basil and red bell peppers and didn’t want to use any mayonnaise. I threw these ingredients together, and it came out great. You may want double the recipe because it goes fast.

Easter Egg Shortbread Cookies and Cookie Decorating with Kids

I love baking kid’s treats, and Easter is a perfect time to make delicious confections. These Shortbread Cookies make decorating cookies so fun! I love to use Ina Garten (Barefoot Contessa’s) recipe for Shortbread Cookies. I omit the chocolate instructions and use Easter egg cookie cutters. My daughter, Leigh, decorated these and had a blast making them. I used store-bought icing and sprinkles to make life a little easier.

Easy Cookies for Passover with a Twist: Mandel Bread with Chocolate Chips

Mandel Bread, or mandelbrot, is a crisp cookie that is similar in texture to biscotti. Since flour cannot be used during Passover, this recipe is made with matzo cake meal and potato starch (both can be found with the Passover section in your grocery). Mandel Bread with Chocolate Chips is really easy to prepare and always a family favorite on Passover. It’s great as a light dessert or even breakfast, dipped in coffee.
