My kids love when I make flank steak for dinner. Since school starts back this week, I thought I would start off the week right by sharing this recipe for Balsamic-Soy Flank Steak which is so simple and quick. I used McCormick’s Montreal Seasoning for the spices which is a blend of peppers garlic and spices (part of their Grill Mates collection).

Big Exciting News: My Upcoming Cookbook

I have some big news. Very big news!!! For those of you who have not heard, I am working on a cookbook, and the manuscript is due September 15th. It is more work than I ever imagined, and I can’t thank my kids, family and friends enough for their understanding during this busy time.

It is a very “big” book. When I say “big”, I mean it. 400 recipes. The book will be out spring 2011.  It is a very exciting time, and I couldn’t have done any of this everyone’s awesome support. I cannot thank you enough.

Weeknight Summer Dinner in a Pinch: Steak Fajita Salad

Since summer began, things seem (and are) busier than ever. Trying to work at home with 3 kids is always a challenge. Some days, dinnertime becomes a last minute thought. This recipe for Steak Fajita Salad is one of my “in a pinch” recipes. My kids love these, and they wrap the steak and vegetables in flour tortillas. I serve mine over lettuce (trying to skip the carbs). I dollop mine with nonfat Greek yogurt for some extra protein and a great substitute for sour cream.

Note: for the Fajitas seasoning, I used McCormick.

Summer Easy Dinner: Glazed Pork with Peach Salsa

Try Pork with Peach Salsa for a quick summer weeknight meal. This recipe is so easy using peach preserves and honey as a glaze over the pork. I use boneless pork loin chops because they cook so quickly, perfect for busy people. Feel free to grill the pork outdoors, inside in a grill pan or even nonstick skillet. This Peach Salsa is wonderful and filled with fresh peaches, cilantro, purple onion and lime juice. If you don’t eat pork, feel free to subsitute boneless chicken breasts, or I prefer chicken cutlets because they are thinner and cook even quicker.

Rich and Creamy: Lightened-Up S’mores Milkshakes

Last week, I mentioned I was in a s’mores whirlwind creating s’mores recipes for various projects. I created this recipe for S’mores Milkshakes in my guest blog post on a really fun website “Makes and Takes“. It’s as yummy as it looks and so easy. This version on my site is the “lightened up” version.

Weeknight Favorite Main-Dish: Lemon Chicken over Pasta

I made this Lemon Chicken over Pasta for a healthy project I’ve been working on. My assistant, Alatia, loved it. She said the most difficult part of this simple recipe was squeezing the lemons. I love to use chicken cutlets, which are thinner than boneless chicken breasts, because they take less time to cook (which is great for anyone with limited time). The chicken turns out so flavorful. Be sure to use the extra marinade to pour over the noodles. This is a great weeknight recipe idea that even younger kids will love.

Vegetarian Healthy Favorite: Cuban Black Beans and Rice

For all of those vegetarian friends and fans, here’s one for you. Cuban Black Beans and Rice is perfect as a main dish or even side dish. Black beans are extremely healthy, as they are a very good source of cholesterol-lowering fiber. They are also rich in antioxidants and may help to protect against cancer. This recipe is really easy to prepare and very filling. Feel free to substitute quinoa for the rice, if desired.

Recipe Testing and Judging: Cheddar Waffles with Applewood Bacon Butter

Okay, so no recipe today. Sorry! I am on a busy, tight work deadline recipe testing and judging for Cheesechampionsonline.com recipe contest for Safeway Cheese USA. The winner receives a “5-Day/5-Night Culinary Boot Camp” at The Culinary Institute. It’s an awesome project, shopping, recipe testing, evaluating and photographing some incredible entries that are as creative as delicious. I made these Cheddar Waffles with Applewood Bacon Butter this morning. Yesterday it was Apple Pepperjack Cornbread with Spicy Maple Glaze (yum!). Tonight it’s Crispy Fig & Prosciutto Pizza with Feta and Walnuts. I will let you know the winning recipe when I’m done.

For Strawberry Month: Strawberry Limeade

I featured this recipe on my blog last year, but since I have so many new subscribers I thought I would bring it back one more time. Strawberry Limeade is just in time for the season of freshest strawberries. It’s only 2 ingredients, and it’s so easy to prepare. My kids beg me to make it year-round, and if I can’t find fresh strawberries, I purchase frozen. These already-sliced strawberries from Dole are my favorite.
