5 Easy Back to School Recipes

My 3 kids start back to school tomorrow, and it’s hard to believe. Where did the summer go? If you’re like me, you are in search for some no fail back to school recipes. This Tuna Checkerboard Sandwich has been a hit with my kids, and it comes from my recent cookbook “400 Best Sandwich Recipes”. Here are 4 other of our household favorites back to school recipes. Croque Monsieur Grilled Cheese Sandwich

Yay to April and National Grilled Cheese Month! I thought I would feature one of my favorite grilled cheese recipes, Croque Monsieur, from my latest cookbook “400 Best Sandwiches: from Classics & Burgers to Wraps and Condiments”. This French-style ham and cheese sandwich typically has Gruyere or Emmenthal cheese. It originated in France as a fast food snack in cafes and bars. It’s so easy to prepare, and it’s the ideal comfort food. Be sure to check out my lightened up variation as well.

Super Bowl Sandwiches: Club Sandwich Recipe & Cookbook Giveaway

New Year’s Thoughts

I know I am like many of you who can’t believe the year has gone by so fast. It has been a good one for me with the release of my first international cookbook, “400 Best Sandwiches”, awesome speaking engagements, great trips (including my first trip to Italy) and so much more. The past few months have been rough for me with the decline of both of my parents’ health. Going through this has put a lot of things in perspective for me, and so I thought I would take time to make a list of a few of my goals for next year. Feel free to comment and tell me yours…

1. Spend more time with my family.

2. Spend more quality time with my family

3. Work smarter, not harder

4. Tackle a new fitness challenge, maybe a half marathon, maybe something new and different.

5. Travel more, but only when it’s truly worth it.

6. Continue to do more yoga

10. Spend more time with friends

11. Listen better

Back to School Sandwich: Lunch Box Sushi & Cookbook Giveaway

My three kids start back to school in a little over a week so I’ve been trying to get back into the groove. I try to be really creative when it comes to school lunch for two out of my three children who insist on taking their own lunch. This year, I have more than enough ideas since the release of my new cookbook, “400 Best Sandwiches: From Classics & Burgers to Wraps & Condiments”. One of our favorite recipes from the “Lunchbox” chapter is this recipe for Lunch Box Sushi. It’s really easy, healthy, fresh and kids love it. Feel free to substitute cooked chicken for the shrimp. Homemade Ice Cream Sandwiches

For Fourth of July weekend, I wanted to share my recipe for Homemade Ice Cream Sandwiches from my new cookbook “400 Best Sandwich Recipes: From Classics & Burgers to Wraps & Condiments”. I came up with this recipe last summer while I was working on this book. My three kids were in the kitchen helping me, so I tried to make it as simple as possible. It is perfect to serve this weekend if you are celebrating with friends and family, or anytime this summer. Use your favorite homemade chocolate recipe or store-bought cookie dough.

Tomato, Fresh Herbs and Feta Crostini for Mother’s Day

Since Mother’s Day is this weekend, I thought I would share a super easy recipe from my new cookbook, “400 Best Sandwiches: From Burgers & Classics to Wraps & Condiments”. These Tomato, Fresh Herbs and Feta Crostini would be considered an open-face sandwich and a simple spring appetizer that is pretty, fresh and versatile with a brunch, lunch or dinner menu. I am making this recipe today along with 4 other recipes on Nashville’s Newschannel 5 “Talk of the Town”. My television segment will air at 11 a.m. central as well as on Comcast channel 50 at 12 p.m., 4 p.m. on Friday and 9 a.m. on Monday. I hope everyone has a great weekend and Mother’s day celebration.
