Berry Yogurt Bowl

Smoothie Bowl

Are you burned out on your everyday breakfast routine? I am. I have been trying to change up my morning routine such as drinking warm lemon water before my cup of coffee, drinking more water and eating a healthier breakfast other than a nutritional bar. This Berry Yogurt Bowl starts with nonfat Greek yogurt (plain, vanilla or  you favorite flavor), fruit of your choice and your favorite seeds and nuts. This can also be made as a smoothie bowl recipe using my recipe for 3 Ingredient Banana Smoothie or Berry Peach Smoothie as the base and then top with the remaining ingredients. This recipe is fabulous for breakfast or even afternoon snack.

3 Ingredient Easter Bars

My daughter, Leigh, saw a version of this recipe for 3 Ingredient Easter Bars on the blog Chelsea’s Messy Apron, and she begged me to get all of the ingredients to make them. I had refrigerated cookie dough at home so we twisted Chelsea’s recipe for Confetti Bars into a creation of our own. I’ll admit that Leigh did most of it on her own, and with my suggestion only needed 3 ingredients.  They are a super sweet dessert just in time for Easter!

Peppermint Milkshakes: Only 3 Ingredients

I first made this recipe for Peppermint Milkshakes on my blog in December of 2008 when I literally threw three ingredients together in a blender for my kids instead of taking them to get peppermint ice cream. Since then, I have been making these religiously for parties and for my 3 kids. It has been one of the most heavenly requested recipes from my children’s friends who have come to my house and tried them. Whenever I’m invited to a holiday party, I typically get asked to make these. This past sunday night, I made them for 28 people, and it was beyond an absolute hit. So many requested me to post the infamous recipe one more time so they can make them for their family Christmas events. Here it is…Enjoy!

Three Ingredients: Blueberry-Banana Ice

Sometimes simple is better, and recipes with only three ingredients actually can be as flavorful as if they had nine. This Blueberry-Banana Ice is one of those recipes that is almost too basic (and good) to be true just in time for July 17th “National Ice Cream Day.” Purchase ripe bananas and in season blueberries and freeze them (I used zip-top plastic bags). Remove and toss in the food processor or blender with a touch of honey, and you’re done. Feel free to experiment with other berries if you wish. This is the perfect healthy dessert for summertime, and it truly hits the spot.

3 Ingredient Simple Peach Sorbet

My kids are infatuated with sorbet and ice cream, especially in the summertime. Since we had some awesome Chilton County peaches from Durbin Farms, I put them to great use in this 3 ingredient recipe for Simple Peach Sorbet from the Southern Living Classic Dessert Cookbook. It’s too easy and tastes fabulous. You can even make this year round using 1 (16-ounce) package of frozen sliced peaches.

3 Ingredient Apple Tart

I love super easy recipes that have only a few ingredients but still taste like a million bucks. This 3 ingredient recipe for Apple Tart is as easy as can be. I used Puff Pastry, fresh apples, granulated sugar, and that was it. It’s so easy to prepare, and it’s perfect for dessert, brunch or even an afternoon snack (my kids devoured this after school).

Oh My: S’More’s Pie

IMG_4001

I have been on a S’mores kick lately as you will see in the coming days. I came up with this recipe by accident. I was trying to get rid of some ingredients from another s’mores recipe project I was working on for “Makes and Takes”, a great website for craft ideas, kid’s craft ideas, food and fun, and I ended up with this. When I put the photograph up on twitter and facebook, everyone went nuts. So here it is. It’s not a “light” recipe, but here are some ways to lighten it up and make it a tiny bit healthier. Use a store-bought reduced-fat graham cracker crust.  Use dark chocolate morsels instead of semisweet. Otherwise, take small bites and enjoy. Trust me, adults as well as kids will love it! As for the other s’more recipe, I created for Makes and Takes, it’s coming soon.

Three Ingredient Appetizer: Roasted Garlic-Topped Brie

IMG_2298

I’m a huge Brie fan and always interested in finding new great Brie recipes. When I was judging a recipe contest for a cheese company and came across this recipe, I was really excited. It’s such a breeze and only 3 ingredients. All you need to do is roast the garlic and warm up the Brie, and you have an easy, delicious appetizer. This is perfect for Christmas, New Years or any time of the year.
