My 3 kids start back to school tomorrow, and it’s hard to believe. Where did the summer go? If you’re like me, you are in search for some no fail back to school recipes. This Tuna Checkerboard Sandwich has been a hit with my kids, and it comes from my recent cookbook “400 Best Sandwich Recipes”. Here are 4 other of our household favorites back to school recipes. I can’t believe summer is almost over, and my kids go back to school in one week. We thought we would do something fun this weekend, so we made these Homemade Ice Cream Sandwiches. I thought I would feature one of my favorite grilled cheese recipes, Croque Monsieur, from my latest cookbook “400 Best Sandwiches: from Classics & Burgers to Wraps and Condiments”. This French-style ham and cheese sandwich typically has Gruyere or Emmenthal cheese. It originated in France as a fast food snack in cafes and bars. It’s so easy to prepare, and it’s the ideal comfort food. Be sure to check out my lightened up variation as well.

It’s so fun to mix and match different types of bread to jazz up the kids’ sandwiches. This recipe for Tuna Checkerboard Sandwich gives regular tuna a twist using lemon juice and white wine vinegar instead of mayonnaise. It is healthier, light and a great new way to get the kids to eat more tuna. My three kids start back to school in a little over a week so I’ve been trying to get back into the groove. I try to be really creative when it comes to school lunch for two out of my three children who insist on taking their own lunch. This year, I have more than enough ideas since the release of my new cookbook, “400 Best Sandwiches: From Classics & Burgers to Wraps & Condiments”. One of our favorite recipes from the “Lunchbox” chapter is this recipe for Lunch Box Sushi. It’s really easy, healthy, fresh and kids love it. Feel free to substitute cooked chicken for the shrimp.
