My Favorite New Kale Slaw Recipe

Kale Slaw

I made this Kale Slaw last week, and my husband and kids loved it! Then I had to take a side dish to some friends house to go with dinner on Saturday night so I made it again (they loved it!). All you need is fresh kale, shredded cabbage, lemons, sesame seeds and walnuts, and most of the other ingredients you already have on hand. It’s so easy and fresh! Just one thing: It’s addictive so you may want to double the recipe. It will keep up to 2 days so enjoy!

Kale Slaw

Prep Times:

15 minutes

Yield:

4 servings

Ingredients:

4 cups fresh kale
4 cups shredded slaw mix
1/3 cup chopped walnuts, toasted
1/4 cup sesame seeds
1/3 cup shredded Parmesan cheese
3 tablespoons fresh lemon juice
1/3 cup extra virgin olive oil
1 tablespoon Dijon mustard
Pinch salt and pepper

Preparation:

1. Whisk together lemon juice, olive oil, Dijon salt and pepper in a small bowl; set aside.

2. In a large bowl combine kale, cabbage, walnuts and Parmesan, mixing well. Add lemon juice mixture, tossing to coat. Cover and refrigerate at least 30 minutes before serving.
