Okay this is the best gluten free cookie recipe I have made in a while! When you read the ingredient list, you may think to yourself (huh?). I promise these Amazing Gluten Free Chocolate Chip Cookies are amazingly good! I was hesitant too, and you should have seen my kids face when I told them what was in them! When they and I tried these, they were hooked. My son, Zachary, ate 5 the first night and my daughter, Leigh had 3 (and they have been begging me to make them again). Amazing Gluten Free Chocolate Chip Cookies
1 (16 ounce) can chickpeas, rinsed and drained
1/2 cup light brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
11/2 teaspoon vanilla extract
1/2 cup natural creamy peanut butter
1/2 cup milk chocolate chips
1. Preheat oven to 350F. Line baking sheets with parchment paper. Set aside.
2. Peel skins off of chickpeas; discard skins and pat chickpeas dry with paper towels. Add chickpeas to container of a food processor; process until smooth. Add brown sugar, baking powder, baking soda, vanilla extract and natural creamy peanut butter; process until smooth. Transfer mixture to a large mixing bowl. Add chocolate chips, stirring gently.
3. Drop dough by rounded tablespoons 2 inches apart onto prepared baking sheets. Bake 12 or 14 or until golden brown on top. Let cookies cool 1 minute on baking sheets, then transfer to wire racks. Let cool completely before serving.
