Super Easy Healthy Granola Bars

My sister, Julie, called me this morning and raved about a granola bar recipe she tried from Giada’s cookbook, Giada’s Feel Good Food. I had all of the ingredients on hand so I tweaked the recipe slightly and made these Super Easy Healthy Granola Bars, which came out awesome! I used liquid coconut oil instead of the safflower oil, added additional oats and vanilla, used golden raisins and added a combination pecans and walnuts instead of just walnuts. These are a fabulous gluten free healthy breakfast or mid or afternoon snack recipe. Since my daughter does not get a lunch break at school, this is the ideal blend of protein, fiber, carbohydrates to help her energized though her day. Super Easy Healthy Granola Bar

Ingredients:

3/4 cup honey
1/3 cup coconut oil
3 large egg whites
1 teaspoon vanilla extract
21/4 cups old-fashioned oats
1/2 cup flaxseed meal
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon sea or kosher salt
11/2 cups chopped almonds
11/2 cups chopped walnuts or pecans
6 dried apricots, finely chopped
1/3 cup dried cranberries
1/3 cup golden raisins

Preparation:

1. Preheat oven to 350F.

2. Spray a 9- x 13-inch glass baking dish with nonstick spray. Line with parchment paper and spray parchment paper with cooking spray.

3. In a large bowl whisk together honey, coconut oil, egg whites and vanilla. In a separate medium bowl combine oats, flaxseed, cinnamon, nutmeg, salt, almond and walnuts (or pecans). Stir oat mixture into honey mixture, mixing until coated. Add dried fruit, stirring well. Transfer mixture evenly into prepared baking dish and press mixture firmly into pan.

4. Bake 30 to 35 minutes or until golden brown. Remove from oven and let cool 30 minutes before slices. Store in a sealed container up to 4 days.
