Lately, I have been on the hunt for a gluten-free cookie mix that is all natural with no preservatives. And most importantly…one that tastes good. Guess what? I found one. Simple Mills is all-natural almond flour based baking mixes that are naturally gluten-free and paleo friendly. The beauty of the mixes is that they only contain real ingredients, such as baking soda and coconut sugar so they’re not filled with preservatives like other mixes.
I am so excited to be a part of their “12 Days of Cookie Campaign,” and each cookie during the campaign connects to a specific personality type. I am creating a cookie recipe that fits my personality, “classic and traditional.” I used their Chocolate Chip Cookie Mix to create these Double Chocolate Chip Cookies. This recipe reflects my personality of my classic and traditional fashion sense, but also because if you follow me, you know I like to take a classic traditional recipe and put my healthy twist on it. In this recipe, I added cacao powder instead cocoa powder because I like its chocolate flavor and that it is made with less processing. It gives the traditional chocolate chip cookie an extra health boost and scrumptious chocolate kick.
These cookies are perfect to give as gifts over the holidays, especially if you have friends or loved ones who like gluten-free and paleo sweets. Those cookies are so easy to prepare, only 15 minutes, perfect for the holiday rush. Follow Simple Mills and their cookie campaign and amazing products and recipes on social media channels below.
