If you’re looking for something to serve this holiday season or for Christmas breakfast, how about Easy Breakfast Tacos? My kids love any type of southwestern foods, and this breakfast recipe idea starts with chorizo, eggs, tomatoes, fresh cilantro and all of your favorite tacos toppings. I used a IMUSA tortilla warmer which is really cool (and a great tool and makes warming tortillas a breeze). This outstanding recipe will be one that your family or guests will remember. Enjoy this holiday season or all year long.
Easy Breakfast Tacos
6 to 8 servings
1 tablespoon olive oil
2 chorizo links (about 7 ounces)
1 medium onion
1 cup cilantro, divided
1 medium tomato
1 cup light sour cream
1 tablespoon fresh lime juice
1 cup shredded sharp cheddar cheese
10 corn or flour tortillas
1. Combine sour cream, lime juice, and salt in a bowl and put aside.
2. Warm tortillas in a lightly greased skillet until golden, turning with tongs. Place in IMUSA tortilla warmer or aluminum foil and set aside.
3. In a non-stick sauté pan add olive oil and bring to medium-high heat. Sweat onions for about one minute and add diced chorizo. Cook for 5 minutes oruntil chorizo is browned. Add half cilantro and all of the cooked chorizo to beaten eggs and cook on low heat, stirring occasionally.
4. Place cooked eggs, cheddar cheese, diced tomatoes and remaining cilantro in separate bowls with the warm tortillas. Assemble tacos and serve immediately.
