My daughter, Leigh, made this cookie recipe from Allrecipes for all of her friends for holiday presents. They came out so good that we had to make them again for Christmas this week. This recipe is foolproof and easy. I love the icing with a touch of almond extract if you like a light almond flavor. Make sure you have your cookie cutters on hand and plenty of flour on your counter for rolling the dough. Feel free to half the recipe if you want to make a smaller batch, but we warn you. Best Christmas Cookies Ever
1 1/2 cups butter, softened
2 cups white sugar
1 teaspoon vanilla extract
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
4 egg whites
4 cups sifted confectioner sugar
1 teaspoon almond extract
1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight if you wish).
2. Preheat oven to 400F. Roll out dough on floured surface 1/4 to 1/2-inch thick. Cut into shapes with your favorite cookie cutter. Place cookies 1-inch apart on ungreased cookie sheets. Bake 6 to 8 minutes in preheated oven. Cool completely.
For the Icing: Beat egg whites in clean, large bowl with mixer at high speed until foamy (use only grade A clean, uncracked eggs). Gradually add sugar and almond extract. Beat at high speed until thickened.
