Okay. This is the BEST Easy Pumpkin Bread I have ever had: Truly! So before you read on, I started with a mix. We were short on ingredients and times so since we now have Trader Joes in Birmingham, I bought their pumpkin bread mix because my niece, Carlie, has been raving about it. You know me. I played around with the box mix directions to my liking (and to make it healthier). I halved the oil and used only 1/4 cup and added 1 (6-ounce) container nonfat plain Greek yogurt (I used Fage). I also added 3/4 cup chopped pecans. The baking time on the box said 55 to 60 minutes. I only cooked mine about 45 minutes so be sure to insert a toothpick around 45 minutes in the center and see if it comes out clean. This is such a great recipe and mix, and my kids said that this is their favorite pumpkin bread. It’s great for breakfast, with coffee, dessert, for an after-school snack or even food gifts for the holidays.
Easy Pumpkin Bread
45 to 50 minutes
1 (6 ounce) container nonfat Greek yogurt
1 cup water
1/4 cup canola oil
1 (17.5) ounce Trader Joes Pumpkin Bread & Muffin Mix
3/4 cup chopped pecans
1. Preheat oven to 350F.
2. Combine eggs, yogurt, water and oil in a medium bowl. Add mix and pecans. Fold together, mixing until mixture is smooth. Pour into a lightly greased 9 x 5-inch pan. Bake 45 to 50 minutes or until a toothpick inserted in center comes out clean.
