Watermelon Mint Floats

It is hard to believe that school starts in a week. I will be driving my son to Missouri for College in a week (another thing hard to believe or think about). Before summer ends, I am continuing to use summers freshest fruit and vegetables in my kitchen. I created these Watermelon Mint Floats the other day which were a huge hit! Watermelon Mint Floats

Prep Times:

15 minutes

Yield:

4 servings

Ingredients:

5 cups fresh watermelon
1 tablespoon chopped fresh mint
1 cup sparkling water or club soda
1 pint low-fat vanilla frozen yogurt
Fresh mint sprigs (optional)

Preparation:

1. In a blender combine watermelon and mint, blending well. Pour mixture through a fine mesh strainer to remove any seeds. Gently stir in sparkling water, mixing well.

2. Scoop vanilla yogurt into 4 (8 ounce) or 2 (16-ounce) glasses. Pour watermelon soda over the yogurt and garnish with fresh mint sprigs, if desired. Serves 4
