Red White and Blue Cobbler

Cobbler recipes are my favorite desserts, especially in the summertime. This Red White and Blue Cobbler is perfect for Father’s Day this weekend or the Fourth of July which is right around the corner. This recipe uses fresh strawberries, blueberries, and raspberries but feel free to mix is up and even use blackberries if you like (as long as you get 4 cups). Red White and Blue Cobbler

45 minutes

Prep Times:

20 minutes

Yield:

8 to 10 servings

Ingredients:

2 cups fresh strawberries, sliced
1 cup fresh blueberries
1 cup fresh raspberries
1 cup all-purpose or whole wheat flour
1 cup granulated sugar
1/2 cup dry oats
1 teaspoon baking powder
1 egg, lightly beaten
1/2 teaspoon ground cinnamon
1/4 cup butter, melted

Preparation:

1. Preheat oven to 350F

2. Spread berries evenly in a lightly greased 2-quart baking dish; set aside.

3. Combine flour, sugar, oats and baking powder, mixing well. Add egg and cinnamon, stirring gently with a fork to combine. Sprinkle flour mixture evenly over strawberries. Drizzle evenly with butter.

4. Bake in preheated oven 40 to 45 minute or until lightly browned and bubbly. Serve warm with vanilla ice cream or nonfat frozen yogurt. if desired.
