I admit it. I have been MIA! Life got a little crazy buying and moving into a new house, but I am back! We are iced in today, so my kids and I made this Spiced Chocolate Covered Fruit recipe. It’s so easy and only 3 ingredients! Dark chocolate is rich in flavonoids, which have heart-protecting properties and are rich in antioxidants. The protective factors are only seen in dark chocolate that contained at least 60 percent (preferably 70 percent or more) cocoa. There’s nothing better than a healthy snack with only 3 ingredients!
Spiced Chocolate Covered Fruit
1 (7-ounce) package dried apricots halves, bananas (or any fruit)
3 ounces chopped dark chocolate
1/4 teaspoon chipotle seasoning (optional)
1. Melt chocolate in microwave on MEDIUM power, stirring ever 30 seconds until smooth, about 2 minutes.
2. Dip half of apricots in dark chocolate and place on wax paper lined baking sheets. Sprinkle evenly with chipotle seasoning and let stand at least 1 hour.
