Lemon Feta and Parsley Egg Cups

Hi Everyone!  This is Mona, I’m so excited to be contributing to Ingredients Inc. I hope you’ll enjoy this easy breakfast recipe I’m going to share with you today!

Breakfast is super important for our daily nutrition. But I am really tired of simple cereals every morning.  If you have the same issue with me and want to try something easy, healthy and fun, stick to this recipe for Lemon Feta and Parsley Egg Cups. This dish can provide you the dietary fiber and gain the strength and energy to carry you through a hectic morning.

Filled with egg, cheese and prosciutto, this egg cup is also very delicious with spring flavors, and looks super cute!  (Some of the ingredients below are from food brand Alexia )

Lemon Feta and Parsley Egg Cups

15 minutes

Yield:

8 servings

Ingredients:

8 Alexia® Artisan Whole Grain Rolls
3 large egg whites
2 eggs
1/3 cup crumbled feta cheese
1/4 cup fresh chopped Italian (flat-leaf) parsley
2 tablespoons whole milk
2 teaspoons grated lemon zest
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 slices thinly sliced prosciutto, halved

Preparation:

1. Preheat oven to 400°F. Place frozen rolls on baking sheet; bake for 12 minutes. Meanwhile, whisk together egg whites, eggs, cheese, parsley, milk, lemon peel, salt and pepper in large bowl; set aside.

2. Cut into tops of baked rolls with serrated knife. Hollow insides of rolls by removing and discarding soft center. Line each roll with piece of proscuitto. Pour egg mixture into each roll.

3. Return filled rolls to oven; bake 15 minutes or until rolls are browned and egg mixture is set.
