Deconstructed apple pie layered with spiced Greek yogurt and Pumpkin Flax Granola, make apple pie parfaits a pretty, crunchy twist on Turkey day dessert too. I used the Pumpkin Flax Granola from Nature’s Path which our favorite store-bought granola. This recipe only has 281 calories per serving with 2 grams of fiber so enjoy! Apple Pie Granola Parfaits
1 1/2 cups plain fat free Greek yogurt
2 tbsp honey
1 tsp vanilla
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tbsp butter
3 apples, peeled and chopped
2 tbsp brown sugar
1 cup Nature’s Path Pumpkin Flax Plus® Granola
1. Stir yogurt with honey, vanilla, cinnamon and nutmeg; set aside.
2. Melt butter in a small heavy-bottomed saucepan set over medium heat. Add apples and brown sugar. Cook, stirring often, for 5 to 7 minutes or tender and golden.
Layer evenly in 4 parfait glasses: apple, yogurt mixture, granola, repeating layers twice.
