I am thinking about making a vegetarian for Cinco deMayo on Monday (or maybe the Kentucky Derby tomorrow). These Tofu Tacos are perfect for Cinco De Mayo. I made these for my 3 kids, and they fell in love with tofu. This recipe is so easy, fast and healthy! I used House Foods Tofu which offers both Premium & Organic products in five consistencies. 1 (12 oz.) pkg. organic tofu extra firm, drained, pressed and cut into 1/2 inch cubes (alternative option: crumble tofu)
1 package low sodium taco seasoning
1 to 2 tablespoons oil
1 (15 ounce) can low sodium black beans, drained
10 corn tortillas
1 (15 ounce) can corn, drained
1/3 head lettuce, shredded
Toppings: Salsa, 1 avocado, cilantro, lime juice
1. Coat tofu in taco seasoning. Add oil to a pan and cook over medium-high heat. Add tofu and cook until browned, set aside (if crumbling tofu, add to pan and sprinkle with taco seasoning).
2. Heat black beans and corn over medium heat until cooked through.
3. Warm tortillas in a separate pan. To assemble, add tofu, black beans, corn and lettuce. If using, top with avocado, cilantro and lime juice.
