Where has January gone? Valentine’s Day is right around the corner so how about an easy breakfast or brunch recipe? This Chocolate Chip Pancake recipe (adapted from allrecipes) is ideal for your favorite person or for the kids. My daughter, Leigh, enjoyed them so much that she made them for me recently (love her always). You can’t go wrong with chocolate chips in anything–especially in pancakes. Chocolate Chip Pancakes
1 cup whole wheat or all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 cup unsweetened almond milk
2 tablespoons butter, melted and cooled
1/2 cup dark or semisweet chocolate chips
1. In a bowl, sift flour, sugar, baking powder, and salt together. Combine egg into milk in a separate bowl until thoroughly combined. Pour melted butter into flour mixture; whisk in milk mixture, stirring until smooth. Fold chocolate chips.
2. Heat a large nonstick skillet over medium heat; pour about 1/3 cup of batter into hot skillet and cook until browned on the bottom, about 3 minutes; flip pancake and cook covered until other side is browned. Repeat with remaining batter.
