5 Amazing Quinoa Soup Recipes

It’s been so bitterly cold lately so I have been looking for some great new soup recipes to try (especially ones with quinoa). Here are 5 amazing quinoa soup recipes starting with my Kale and Sausage Quinoa Soup (pictured above). It is so hearty and makes a great one dish meal. My kids loved it too! Enjoy it as you start your new year off on the right foot!

Kale and Sausage Quinoa Soup

Yield:

6 to 8 servings

Ingredients:

2 tablespoons extra-virgin olive oil
3/4 cup yellow onion, chopped
11/2 cups chopped carrots
1 (8 ounce) package mushrooms
8 ounces Italian sausage or ground white turkey meat, broken into small chunks
1 tablespoon Italian seasoning
6 cups low-sodium chicken broth
1 (15-ounce) can diced tomatoes in juice, drained
1 cup cooked quinoa
31/2 cups coarsely chopped kale
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup chopped fresh Italian parsley
1/4 cup freshly grated Parmesan, optional

Preparation:

1. Heat the oil in a large pot over medium-high heat. Add the onions, carrots and mushrooms; saute, stirring frequently, until the vegetables begin to brown and soften slightly, 6 minutes.

2. Add the ground sausage and stir until the meat turns white and begins to color very slightly around the edges, 5 to 7 minutes. Add the Italian seasoning and stir, 1 minute. Add chicken broth, tomatoes and quinoa. Bring to a boil. Stir in the kale, salt and pepper. Reduce the heat to medium-low. Cover and simmer until the vegetables are tender, about 15 minutes. Serve and sprinkle each serving with parsley and Parmesan, if desired.
