Fast and Easy Chicken and Dumplings
2 stalks celery, finely chopped
3/4 cup finely chopped onion
1 tablespoon olive oil
11/2 cups skim milk
2 cups frozen peas and carrots
21/2 cups cut-up cooked chicken
2 cups sodium free chicken broth
1 can (10 3/4 oz) condensed creamy chicken mushroom soup
2 cup Bisquick Heart Smart® mix
1/3 cup skim milk
1. Saute celery and onion in oil in a large skillet over medium heat 3 minutes or until tender.
2. In 3-quart saucepan, heat 11/2 cups milk, frozen peas and carrots, chicken and soups to a boil.
2. In small bowl, stir together Bisquick® mix and 1/3 cup milk until soft dough forms. Drop dough by 8 spoonfuls onto chicken mixture.
3. Cook, uncovered over low heat 10 to 15 minutes. Cover and cook 10 minutes more.
