Feel Good Green Juice
5 to 6 ounces fresh kale or spinach
1 cucumber, peeled and sliced
2 Granny Smith apples, cut into chunks
1 cup fresh chopped pineapple
1 lemon, squeezed
1/4 cup fresh parsley
1 (2-inch) piece fresh ginger, peeled
1/4 to 1/2 cup coconut water
1. Pass the vegetables and coconut water through a juice maker, according to the juicer directions. Pour the juice into 2 ice-filled glasses and serve.
2. Serve immediately or refrigerate for up to 2 days. If refrigerated, shake well before serving.
