Saucepan Popcorn Recipe & Healthy Back to School Snack Ideas

Since school just started back, I am trying to start the year off right. I try to be creative and point my kids in the right direction when it comes to packing healthy lunches and providing after-school snacks that are good for them. My three children love this recipe for Saucepan Popcorn which is so easy and healthier than the other popcorn alternatives. Here are some other quick ideas for when you are in a hurry that have a nice balance of protein, fiber and carbohydrates:

Reduced Sodium Cottage Cheese with fruit

Whole grain crackers with cheese

Saucepan Popcorn

Cook Time:

5 minutes

Prep Times:

5 minutes

Yield:

6 cups

Ingredients:

1/4 cup grated Parmesan cheese
1/4 teaspoon sea salt
1 tablespoon canola oil
1/4 cup popcorn kernels

Preparation:

1. Combine Parmesan and salt in a small bowl.

2. Heat the canola oil and 2 popcorn kernels in a saucepan over medium-high heat. When 1 or 2 of the kernels pop, reduce heat to medium and add remaining kernels. Cover and cook, shaking the pan occasionally, until the popping subsides, about 2 minutes. Transfer the popcorn to a large bowl, sprinkle with the Parmesan mixture, mixing well.

  1. I love making fresh popcorn – it’s so much cheaper that the ready made stuff. I like making it in a saucepan with a glass lid – it makes it so much more exciting! Never thought to put Parmesan cheese on it – I normally just stick to a shake of salt.
